Amazing ricotta and Parmesan! Also a little store! Excellent shop! Very pleasant staff, especially Jessica, she is very knowledgeable and nice. Fun time at the Parmesan factory. The was informative and interesting. We were a small group of 5 people, so it was basically a private tour. The was good and generous. Recommended!! The highlight of any food in Bologna, this place takes you through the history and of the worlds finest cheese. They also sell vacuum packed portions that can make it through customs! Definitely a MUST SEE. We booked a for a family of 4 and they got back to us via email right away to confirm. We were running late on the morning of our and they were able to accommodate us without any issues. Linda was our guide and she walked us through the Parmesan from start to finish. We’ve done a Parmesan previously and this was a little more informal but we appreciated how customized the was. Linda walked us through the dairy to meet the including calves that were 10 days old. We also watched the employees tortellini by hand. We arranged for two levels of tastings: €15 for two agings (includes a small selection of breads and salumi) and €25 for three agings (includes tigelle, salumi, and Lambrusco). For comparison, we contacted another local Parmesan producer for a and they got back to us 2 days later and were charging €60 pp. There is a small store selling wine and various food products including pasta (dried and fresh) and a refrigerated case with various ages of Parmesan and locally made salumi. We highly visiting AA Moscattini if you are in the Emilia Romagna region! Interesting and fun tour. Different options for tastings (different aging ranges, with or without wine). The store has lots of local products. We made a reservation several weeks in advance. We called to confirm the same morning, and were told to come. When we arrived, they said there was no reservation but they can still host us. So, it's recommended to get written confirmation ahead of time. Wonderful by Natasha! Really informative and welcoming. We booked a in July 2025. The way to get there is complicated. We arrived in Modena by train and got a taxi. The nice staff called us a taxi for the return to Modena. Annouce the in advance so they can book the return taxi for you. The bus is not reliable. Best way to get there is by rented car. The took about hald an hour, and we were guided and the lady from the shop explained the full producing process. Before the we went and saw the eating. You can buy parmigiano from their shop and other goodies. We tasted 3 ages of parmigiano, really good. We visited the Moscattini farm for a Parmesan tour. The aging room was truly impressive and gave us a sense of the process. The staff was super friendly and also showed us how they make fresh tortellini, which was a nice bonus. However, the dairy section felt underwhelming – we were shown a video on a tiny screen that was barely visible. For a €20 per person tour, the setup could definitely be improved to better visualize the production process. The afterwards was excellent, and we bought some delicious products at prices. At the end, we were invited to see the and told there were calves in the back. This part was quite shocking – the were lying in their own waste in very limited space, and the calves were kept in small pens, separated from their mothers. We had expected more freedom and cleaner conditions. It took away some of the joy, though we realize this may be the reality of dairy farming. Overall, it was an interesting and eye-opening experience, part impressive, part difficult to digest. The was great, the fact that we are able to walk through all the stages of production and get an explanation of what was being done was great! The aging room in the back is nothing short of overwhelming in terms of its size. They also still had all of their cheeses that did not meet the standard in the warehouse, which helps to visualize how much doesn’t come out perfect even after decades of running the farm. The at the end was great, got to sample 3 different ages of as well as a ricotta, would highly visiting if you enjoy learning about how the food is made. Very cool to do a and see how the greatest of Italy is being made. Do a and buy some of the many producta in there shop. You can get pastas, Balsamic vinegar, different meats, yoghurts, many cheeses like Parmigiana Reggiano of even 50 and 84 months old! This was so much fun. We were the only people on the English speaking and our guide had perfect English. She was so knowledgeable about the and we saw every step of the journey from milk to parmigiano reggiano. We even got to go outside and meet the cows. The is huge so don’t have lunch before! Served with lovely mortadella and salami cold cuts and tigelle and Lambrusco. We bought a 36 month aged slice to bring home. Would definitely recommend! We had such a wonderful with Natasha. Getting to see the whole production cycle (even the cows!) was a treat but it was nothing compared to the delicious Parmesan taster at the end. Definitely your way out here! Absolutely the tour! The highlight was definitely the at the end, where we tried three different types of Parmesan cheese. Each one was delicious and a true treat for the taste buds 🤩.
