Seems to be quite popular but the bun and the raisin bun tasted like a regular bun you’d get from a cheap English supermarket, like almost identical except it had a shiny glaze. Really disappointing considering how posh it looks, but then again looks can be deceiving. The place its self is very pretty tho and the fact it’s mostly made on sight is a good thing, just a shame the flavours are so boring. Must try this recipe that they have. The bread 🍞 My special gratitude to Mr. Fedde, for his service Stepping into Aux Merveilleux de Fred Bruges felt like entering a patisserie dream. Right away, the eye is drawn upward to the grand, sparkling chandelier suspended in the centre of the two-storey interior! a luxuriously ornate touch that perfectly sets the mood for what follows. The space is elegant yet welcoming, with warm lighting, soft marble counters, and an open-view kitchen where chefs work in plain sight. Watching them craft the pastries made the whole visit feel special. There’s a fascinating story behind this bakery: the house is the creation of master chef Frédéric Vaucamps, whose journey began in Northern France. He opened his first traditional pâtisserie in 1982.  The star confection is the “Merveilleux” a traditional from the North of France and Flanders, built of airy meringue layers and whipped cream, then coated in delicate shavings.  Aux Merveilleux de Fred is committed to artisan craftsmanship: every is made on site, in full view of customers, using traditional methods.  At Bruges I decided to try the chip , a reinterpretation of the classic “cramique” from the region. At first glance, the size seemed generous, making me think I might not finish it. But after the first bite? I was instantly won over. The was richly buttery, dotted generously with chips that melted just so, each mouthful was both comforting and surprisingly light. Before long, I found myself seriously considering ordering a second one! Sipping a cappuccino alongside that luxurious chandelier, browsing the tempting tray of handcrafted sweets, and watching the skilled bakers at work, this wasn’t just a quick stop for a pastry; it was an experience. The staff were attentive and friendly, balancing the premium setting with a genuine warmth. If you are in Bruges and love the idea of combining elegance, craftsmanship, and delicious flavour, make time for Aux Merveilleux de Fred. It’s the kind of place that lingers in memory and taste. Saw this place interesting. Quite busy place but the line is moving fast. (I feel the staff was rushing me. This was the first time for me to go to this cafe and I feel like I couldn’t ask any questions to the staffs about what they have in the store.) Staffs are all working fast Pretty cosy little french bakery with as speciality merveilleuxs. We just went there for a coffee and a piece of breadpudding. Nothing to complain and all the other items also looked very tasty. You realize the SCAM when you decide to eat in and they charge you 0.5€ per article ! We took coffees and bakeries. They charged us 0.5€ for each item ! To be honest the bakeries was good, nothing special than any other bakery except the Meringue. The coffee was medium. The atmosphere was quite elegant. I had previously tried the white and caramel in Brussels and really liked it. This time, I tried the cherry and flavors. They are absolutely amazing. Loved the vast selection and is always buzzing 🙌🏻 There is a table down stairs you can use if you have a dog. Dog friendly like most places here . Food fresh and very very nice . We bought a over here, it's an entire cake. We usually are not big sweet eaters, but overall the was extremely right. The flavors were very unique and even though we bought a relatively large cake, it was 8 of us. We finished the entire because honestly didn't feel heavy compared to American cakes. This felt a lot lighter and the sugar was extremely balanced with other flavors shining through. I definitely recommend buying a or pastries there. A very good shop that makes everything locally, with excellent quality. The only downside is that the prices for eating in are a bit high, but I still highly recommend it. The place was very stylish and bright, and the aroma of Cramique wafted out onto the street. We queued up to get in and wanted to have a coffee together. While my husband was in the queue, I wanted to use the toilet, but it was very crowded and I guess I wasn't noticed at that moment. Later, my husband noticed, and people who wanted to use the toilet like me were warned and asked to order first. We took our coffees and sat down at a table opposite the counter. I think it was the manager. He was directing all the staff sternly and getting tense with the customers. We felt tense while we were sitting there. The coffees and the freshly baked Cramique pastries were delicious..Whatever happens, they should be tried! This beautiful premises hit the spot for me. The staff member I spoke with was both professional and helpful. The ambience was just perfect. The coffee was very good. It was served at table. It was in a cup what a delight. Mind the marvellous chandelier that gives the place that extra special look.
